Building a pantry can take a while to accomplish.  I remember when I started cooking how expensive it was to make recipes .  I didn’t have the spices , which are pricey and in some recipes I needed four or five.  I started  trying to put together recipes that used some of the same ingredients.  Over the years I have created a 20131103-103738.jpgpantry where I can go at a moments notice and create a nice meal for my family. Also, A well stocked pantry can also help insure that you have everything you need and wont have to run back to the store in the middle of cooking for that one missing item.

So what is in my pantry?  I have the usuals.  Rice, bread crumbs, pasta, tomato sauce, corn, black beans, olives, and seasoning . I like to use capers, enchilada sauce, taco seasoning, anchovies, and tomato paste.  I also have a cabinet of my favorite herbs.  I don’t have every herb only the ones that I know I like.  I also have a little herb garden outside my kitchen window, again these are the herbs that I use most.  I do find that leaving out herbs in recipes doesn’t always mess them up.

Along with the pantry I always have chicken and veggies, even tortillas, filo dough, puff pastry and wonton wrappers, on hand in the freezer. We tend to eat out a lot and make last minute plans so fresh doesn’t always work for us. I have one cup servings of spaghetti sauce frozen in zip lock bags as well as homemade chicken stock, and a few soups for easy single serving meals.

Here are some of the things that I can make at the drop of a hat:

Chicken Enchiladas, Southwestern Egg Rolls , Pesto Chicken Pasta, Chicken Picata, Chicken with Broccoli and Wild Rice Casserole, Spaghetti and Meatballs.
