Egg Salad Basics

Egg salad is a staple in our house.  The measurements below are averages.  I like my eggs with more mustard and less mayo. I also like them to be on the dry side. Leaving out the onions is fine. I have also added black olives or capers for a different twist.

What You Need:

6 Hard Boiled Eggs

1/4 Cup Mayo

2 Tablespoons Dijon Mustard

1/2 Cup Celery

1 Green Onions or 2 tablespoons minced onion

Salt and Pepper to Taste

Chop up eggs or use an hard boiled egg cutter.  Mix the rest or the ingredients together.
