Meatball and Couscous Soup

This is an easy soup to put together.  I used the meatballs that I had frozen when I was making meatballs for my Christmas Party.  Israeli Couscous is a larger version of couscous. If you can’t  find it a small pasta would probably work well as a substitute.


What You Need:


1 Cup Israeli  Couscous

2 Tablespoons Olive Oil

1 Shallots

3 Garlic Cloves Chopped

3 Cups Chicken Stock

1 Tablespoon Parsley

Salt and Pepper to taste

What To Do

Follow package instructions for couscous. I like to cook the couscous in chicken broth to give it more flavor but water works well also, just be sure to salt the water a little. While the couscous is doing its thing heat the olive oil in a heavy sauce pan.  Saute the shallots and garlic for about a minute. Add the stock and and bring to a boil then reduce the heat. Add the meatballs and couscous and simmer for about 10 minutes. Stir in the parsley, add salt and pepper to taste and enjoy.
