This is another of my make ahead breakfasts. On Sunday morning I made the bacon and sausage for our breakfast and while I was at it I cooked up the whole package. I chopped and cooked the whole onion and added another jalapeno to the mix. I then divided everything into single serving portions and stored them in plastic bags that both my husband and I can have a fast and health meal on weekday mornings. This mix can also be frozen.
