What You Need:

Store Bought Enchilada Sauce

Shredded Chicken

Grated Cheese

Corn Tortillas

Black Olives



Green Onion

Sour Cream



I have lightened up my enchiladas a little and no one is the wiser.  In a more traditional enchiladas the corn tortillas are fried in oil so that they can be rolled.  I make my enchiladas more like lasagna so I don’t need to fry them.   I first boil the chicken in water or take by pre-cooked chicken form the freezer I layer sauce, corn tortillas, shredded cheese, and chicken over and over until I get to the top of the dish or run out of ingredients.


Alterations:  Instead of chicken you can use beef or even just cheese. I sometimes like to add olives or caramelized onions.
