What you need:

1 pound Potatoes

3 Large Portobello Mushrooms (or any other kind)

2 tablespoons Olive Oil

2 Chopped Garlic Cloves

Salt and Pepper to taste

Flat Leaf Parsley

Steam or Microwave potatoes until just tender. Once slightly cool, slice into one inch pieces. Heat olive oil in pan. Add potatoes and mushrooms and cook until golden brown, stirring occasionally. Add garlic, salt and pepper and cook for a minute more.  Remove from heat and add parsley.
