1 Lb Chopped Mushrooms
1/2 Chopped Onions
2 Tablespoons Olive oil
2 or 3 Sprigs Thyme
Salt and Pepper to Taste
Nonstick Spray
Puff Pastry
Swiss Cheese (or any gooey cheese)
Cupcake tin
Make Ahead:
I chop the mushrooms and onion and sauté them a few says before. The morning of I defrost the puff pastry.
Saute the mushrooms and onions adding salt and pepper to taste. Cut Cheese into 1/2 in cubes. Spray bottom of cupcake tin with nonstick spray. Place a spoonful of the mushroom mixture into each cup place 1 or 2 cubes of cheese in each cup and them tuck a square of puff pastry on top of and down the sides of the cup. Bake at 400 degrees for about 20 minutes. The puff pastry should be puffed and golden brown.
I tried these mushroom turnovers and they are amazing. Even my father-in-law loved them!
