There are so many different things that you can add to the basic hamburger mix to jazz it up.  Instead of topping off my burgers I like to add it to the mix. I find that it is less messy all around.  When adding cheese I cube it up and place it in the center of the paddy so that when you bite into it the cheese oozes out. All the other toppings are added to the mix. Sauces like mayo and mustard are still used after cooking.

Some items to add to the basic mix:

onions, cilantro, and jack cheese

mushrooms, bacon, cheddar

green chiles, bacon, and pepper jack cheese

blue cheese and red onions

Mozzarella cheese, marinara sauce, and grilled mushrooms
