This meal is a childhood favorite of mine.  I can still remember helping my mom dip the chicken into the egg and flour. Back then we flattened the chicken and cooked it in butter.  I now choose olive oil and skip the flattening unless the chicken is really thick.

What You Need:

4 Boneless Chicken Breast

2 Eggs

1 Cup Flour

 2 teaspoons Salt and Pepper

1 Tablespoon Old Bay Seasoning

1 Tablespoon Olive Oil

What To Do:

Scramble the eggs and put on a large plate.  On a separate plate, mix the flour, Old Bay seasoning, and salt and pepper together.  Dip the Chicken into the eggs and then into the flour.  Set on a rack and continue with the rest of the chicken.  Let the chicken rest for 15 minutes.  Heat the oil in a non stick pan.   Add the chicken and cook for 7 minutes.  Flip and cook for an additional 5 minutes or until the chicken is cooked through.
