One of the best meals I ever had was chicken with artichokes at this great little Italian restaurant in town. Then one day, they changed chefs and shortly after that they closed.  I have dreamt of that meal for years.  I have read about and made, many  versions of this meal but to me this one is  almost spot on.

What You Need:

1/4 Cup Olive Oil

1/4 Cup Fresh Lemon Juice

2 Tablespoons Honey

2 Minced Garlic Cloves

1 teaspoon  Thyme

1/2 teaspoon Salt

1/2 teaspoon Red Pepper Flakes

4 Cubed Boneless Chicken Breasts

1 Can Artichoke Hearts


What To Do:

Combine the olive oil, lemon juice, honey, garlic, thyme, salt, and pepper flakes in a bowl.  Sprinkle the chicken with salt and pepper and saute in a large pan with 2 tablespoons of olive oil.  Drain and rinse the artichokes then add them to the pan along with the dressing.  Simmer for about 5 minutes.   Serve over orzo pasta.
