My Lunch Box …

Lunch, for me, was always a last minute panicked grab and go.   I reached for leftovers, frozen lunches, or nothing. This along with eating dinner out 3 or 4 times a week was really becoming a bad combo so I decided to leave the doggie bags at the restaurants and packing fresh and new lunches every morning.

Here are some of my latest ideas.


Cottage Cheese with Chick Peas, Avocado, and Red Onions,  Turkey Wrap with  Avocado and Red Onions, Pineapple and a Tangerine, and a Granola Bar


Ham and White Bean Soup, Spinach Salad with Chicken, Carrots and Red Onions, Crackers and Cheese, and Pineapple and Blue Berries.


Open Faced Avocado Sandwich with Red Onions,  Cottage Cheese with Chick Peas and Red Onions, Grapes, Pineapple, and bBlue Berries, a Granola Bar, and Dried Apples.


Roast Beef Sandwich with Garlic Mayo, Hard Boiled Egg, Cottage Cheese with Black Beans, Carrots, and Red Onion, Snap Peas, and a Tangerine, Pineapple, and Red Grapes.


Avocado stuffed with Tuna, Celery and Radishes, Strawberries and Pineapple, and Chocolate Covered Pretzels.


Veggie and Cheese Sandwich, Hard Boiled Egg, Trail Mix, Cottage Cheese with Tomato and Green Onion, and 1/2 a Banana, Kiwi, and a few Grapes.
