Black Bean and Bell Pepper Soup

What You Need:

1 Tablespoon Butter

1 Tablespoon Olive Oil

1 Cup Chopped Onion

1 Can Drained and Rinced Black Beans

2 Cups Red and Orange Bell Peppers

6 Cups Chicken Stock

Salt and Pepper

What To Do:

Heat the butter and olive oil in a heavy pot.  Add the onions and heat for 5 minutes.  Add the bell peppers and black beans to the pot, cover, and simmer on low for 10 minutes.  Stir in the chicken stock and simmer for and additional 15 minutes.  Season with salt and pepper and enjoy.
