Spaghetti Salad

I usually find pasta salads to be heavy and over mayonnaised.  ( Is that a word?) Well, you know what I mean. I have really enjoyed adding salad dressings to my pasta salads.  I know this is not a new idea, but it is a great one!

This pasta is great and full of yummy flavors.  Best of all it is incredibly easy to throw together.  I  like to chop all the vegetables as I cook the pasta. I then rinse the pasta under cool water once it’s done and toss it with a little dressing.  The pasta really absorbs the flavors when it is warm.  Once it had cooled to room temperature, stir in the rest of the ingredients,  add a little more dressing and sprinkle with salt and pepper.

What You Need:

1 Package Spaghetti

1 Can Black Olives

1 Can Chick Peas

1 Diced Cucumber

1 Cup Diced Red Onion

1/4 Cup Capers

1 Jar Marinated Artichokes

Oil and Vinegar Dressing

Salt and Pepper

What To Do:

Bring a large pot of water to a boil, season liberally with salt, and add pasta.  Cook the spaghetti according to the package directions, drain, and set aside to cool. Meanwhile,  drain and rinse the chick peas.  Drain the olives, capers, and artichokes.  Chop the artichokes and olives into bit sized pieces.  Once the pasta has cooled, toss with the dressing, add all the vegetables, sprinkle with salt and pepper, and taste.
