Today’s lunch was yummy and simple to put together.  Cottage cheese, a soft taco, fruit, and a hard boiled egg.   I really like cottage cheese.  Lately I have been rinsing it off before using it.  I like to add lots of vegetables to my cottage cheese and I was finding that it made everything really runny by lunch time.  I simple put a serving in a sieve and rinse it under running water.  I then let it drain for a few minutes and I am ready to go.For this cottage cheese salad, I simply added some avocado, sliced tomatoes, and green onions.

The taco was left over from a lunch out so that was simple and I always have hard boiled eggs ready in the fridge.  I like the hard boiled eggs for a mid morning snack.  They are a nice, low calorie, high protein snack.  Add a side of fresh fruit and lunch is served!
