I really enjoy potatoes as a side dish. Over the years I have come up with some short cuts to speed up the cooking process. Not to mention, cut down on prep time.
Some of my tricks are to throw a few potatoes into the oven whenever I have it on. Just because you cooked it today doesn’t mean you have to eat it today. This trick works really well with twice baked potatoes. If I find myself with out a cooked potato in the fridge, I simply throw a few into the microwave for a few minutes to get them partially cooked through.
What You Need:
3 Red Potatoes
1 Tablespoon Cajun Seasoning
1/2 Tablespoon Butter
What To Do:
Wash and dry the potatoes. Slit each potato and place in the microwave for about 3 minutes. Remove the potatoes and let rest until they are cool enough to handle. Cut the potatoes into cubes and sprinkle with cajun seasoning. Heat the butter in a non-stick pan. Add the and fry until golden brown on at least one side.
