What You Need:

1 Tablespoon Olive Oil

1/2 Cup Sliced Zucchini

1/2 Cup Sliced Onion

Salt and Pepper to Taste


1 Tablespoon Butter

1/4 Cup Shredded Cheese


What To Do:

Heat the oil in a pan.  Add the zucchini and onions to the pan and saute for about 10 minutes.  Sprinkle with salt and pepper and set aside.  Wipe out the pan and add the butter.  Once the butter has melted, add the tortilla.  Top with the zucchini and onions.  Sprinkle with the cheese, fold the tortilla, and heat until the cheese has melted and the tortilla is crispy.
