This recipe looks like it has a ton of ingredients and steps but it came together quickly and easily. ( The whole meal didn’t even take 25 minutes from start to finish).  The meat took the longest to prepare ( 10 minutes).  If you had the time you could cook the meat the day before.

What You Need:

1 Package Gnocchi

1 Tablespoon Olive Oil

1 Lb Ground Beef

1 Small Chopped Onion

3 Minced Garlic Cloves

1 teaspoon Olive Oil

Salt and Pepper

1 Can Rotel

1 Cup Beef Stock

1 Cup Cheddar Cheese

Chopped Green Onions

What To Do:

Heat the olive oil in a pan and add the gnocchi.   Cook just long enough to slightly brown the gnocchi then remove from the pan and set aside.  Add the ground beef, onions, and garlic to the pan along with a little more olive oil if needed, sprinkle with salt and pepper.  Once the meat is cooked, drain the meat.  Return the gnocchi to the pan. Add the can of Rotel along with the beef stock. Bring to a simmer and cover.  Cook for about 10 minutes, or until most of the liquid is absorbed.  Stir in the cheese and continue to cook until it has melted.  Sprinkle with green onions and serve.
