In the past, I would usually just eat dinner leftovers for lunch.  Lately, I have been trying to put together more creative meals.   I still take leftover, but now I try to pair them with different things so that I am not eating the same thing for days in a row.

Yesterday, I used my leftover carrot and spinach pasta salad, and added a turkey and cheese sandwich on sourdough.  I added a hard boiled egg and string cheese as snacks and I was ready for the day.

I am a teacher and on my  feet all day, so the extra protein from the egg and cheese really help me stay full without adding to many extra calories to my diet.
