Orzo Pasta with Carrots and Spinach

Like I have said before, I am always trying to get more vegetables into our diet.  This side dish/ salad is a great way to do just that.  Not only is it yummy warm, it is wonderful cold.   I originally served the pasta warm as a side dish with chicken and salad. The next day, both my husband and I took it with us to lunch.

What You Need:

1 Cup Orzo Pasta

2 Cups Diced Carrots

3 Cups Spinach

2 Tablespoons Butter

Salt and Pepper

What To Do:

Cook the pasta according to the package directions.  Drain and set aside. Place the carrots in a separate pan and just cover with water.  Bring to a boil and cook until the water has evaporated and the carrots are tender. Add the butter to the pan and stir until the butter has melted and the carrots are evenly covered.  Sprinkle with salt and pepper, stir in the cooked pasta and spinach, and remove from heat.  Enjoy.
