Prosciutto is very close to bacon.  It is cured and has very little fat to it.  Since it is cured, it is salty so be careful when adding additional salt to the potatoes.

What To Do:

Fill a pot of water to a boil. Peel and cube the potatoes. Add them to the water and boil until tender.  Drain and return the potatoes to the pot.  Add the butter and cream and mash.  Stir in the shredded cheese, cover, and set aside.  Heat a separate pan and add the prosciutto.  It will crisp up just like bacon.  Remove from pan, chop, and stir into the potatoes.
