Sausage and Zucchini Rice

This makes a great meal or side dish.  I like to use hot sausage to give the dish a little kick.  This also freezes nicely.

What You Need:

1 Cup Sausage

2 Sliced Zucchini

1/2 Cup Diced Onion

Olive Oil

Salt and Pepper

2 Cups Cooked White Rice

What To Do:

Heat a non stick pan.  Add the sausage and cook.  Remove the cooked sausage from the pan and drain.  Add the onion and zucchini to the same pan, you may need to add a splash of olive oil, and saute for about 7 minutes or until the onions are translucent.  Stir in the rice and continue to cook until the rice is heated through.  Stir in the sausage and serve.
