Whenever I have the oven on I always throw in a potato for future use.  Twice baked potatoes can be made ahead of time.  They can even be frozen.  If you are going to freeze these guys you will need to place them on a cookie sheet and place them in the freezer.  Once they are frozen solid wrap them  tightly in tin foil and place in a sip lock bag.  When you are ready to use them, remove the tin foil and let them thaw in the fridge.


What You Need:

2 Large Potatoes

3 Tablespoons Melted Butter

1/3 Cup Milk

Finely Chopped Rosemary

Salt and Pepper

What To Do:

Preheat the oven to 400 degrees.  Wash the potatoes and wrap them in tin foil.  Place the potatoes in the oven and bake for about 40 minutes or until they are soft.  Remove the potatoes and let them rest until they are cool enough to handle.  Cut each potato in half, scoop out the centers with a spoon, and place it in a bowl.  Add the rest of the ingredients to the bowl and mix well.  If the mixture is dry add a little more milk.  Spoon the mixture back into the skins and place on a cookie sheet.  Place back in the oven and heat for about 5 minutes.
