Soft boiled eggs are a wonderful, healthy treat. SImply place the eggs in a pot of water, add a splash of vinegar, and bring to a boil. Boil for 5 minutes and then remove the eggs from the water. Let the eggs cool for about 5 to 10 minutes before peeling. They will peel just like a regular hard boiled egg.
I practiced making these when I was making hard boiled eggs. It took a few tries to get the eggs to my liking. I just pulled one out and see what I get. I don’t mind if the whites are not totally set, I just want the yolk to be runny. My husband can’t stand runny whites or yolks so I leave his in for an extra 2 minutes.
What You Need:
Soft Boiled Eggs
Sliced Red Onion
Cooked Asparagus
Salt and Pepper
Toast
What To Do:
Cook and peel the eggs. Arrange the toast on a plate. Top with the sliced onions and asparagus. Place the eggs on the toast and slice them in half. Sprinkle with salt and pepper and enjoy.
