Egg Salad and Avocado Sandwich

I love this sandwich for how easy it is to throw together and how yummy it is.  I always have hard boiled eggs on hand so that really helps make this a quick lunch to throw together.  I recently read that letting hard boiled eggs sit for a few days after boiling makes them easier to peel.  I am not sure how true this is because I always make mine ahead of time.  My trick is to add vinegar to the water before boiling.

 Another thing I noticed was the price of the eggs seemed to make a difference.  Not sure why. I never really payed attention on how much eggs cost.  I like the brown ones, mostly because of how pretty they look in the bowl in my fridge (dumb I know), not because I can tell the difference in taste.  A few months back I noticed they were a few dollars more than the white eggs  right next to them, so I grabbed the white ones instead.  All I can say is that I had the worst time getting the shells off.  Not sure why, but it seems to happen every time  I grab them.

What You Need:  ( For 2)


1 Cup Egg Salad

1/3 Cup Chopped Red Onion

1/2 an Avocado


Salt and Pepper

What To Do:

Make the egg salad.  I left out the green onions and used red instead. I don’t suggest making the egg salad to far ahead of time, it seems to get runny.  Place the egg salad on the bread, top with the avocado and sprinkle with salt and pepper.  Add the lettuce and top off with bread. Enjoy.
