Zucchini Hashbrowns

I am always trying to find a way to add more vegetables into our diets.  Adding grated zucchini to hash browns is one of the ways I do this.  The zucchini doesn’t really change the flavor of the hash browns. It does change the color, so there is no hiding the fact that they are in there.

What You Need:

1 Tablespoon Olive Oil

1/2 Cup Chopped Sweet Onion

1 Cup Grated Zucchini

1 Cup Frozen Hash Browns

Salt and Pepper

What To Do:

Heat the olive oil in a pan.   Add the onions and saute for a few minutes.  Add the zucchini and potatoes and cook for about 5 minutes then flip them over and cook for an additional 5 minutes..

Note: If you want the hash browns to be crispy without adding to much oil place the zucchini in a towel and squeeze to help get rid of a lot of the moisture.
