This is one of my go to pantry meals that only takes minutes to make. With such busy days it is nice to know I don’t need to run to the supermarket at the end of the day.  I have a few pantry go to meals that I can always throw together at the last minute.  This is also handy when we have unexpected guests. 

 I always have pesto, pasta, and frozen chicken on hand.   For this meal I used cheese tortellini that I had in the freezer. I boil the water for the pasta and cook the chicken in an pan with a little salt and pepper. Once the  chicken is cooked I add the store bought pesto, a minced garlic clove, some red pepper flakes, a Jalapeño (If I have one), and the cooked pasta.  Done!  I like to pair it with a nice side salad or garlic bread, if I have it in the freezer.

What You Need:

1 Package Pasta

1 Chicken Breast

1 Jar Pesto

I minced Garlic Clove

1 teaspoon Red Pepper Flakes

1/2 Diced Jalapeno

Salt and Pepper

Cook the pasta according to package directions. Cube and season the chicken.   Add garlic, pepper flakes, and Jalapeno to the pesto in the bottom of the serving bowl.  Add cooked chicken and pasta.  Mix and serve.
