Believe it or not, my family and friends really love this meal.  The trick with finding brussel sprouts that are sweet is to pick the smallest ones you can find.  I am lucky, in that, my local Trader Joe’s sells them frozen.  Once they are defrosted they are tender and sweet.  These frozen gems make a quick meal or side dish. Because they are frozen, they are soft once they are defrosted so they don’t need to be boiled before adding them to the pan.

What You Need:

1 Cup Frozen Hash Browns

1/2 Cup Diced Ham

1/2 Cup Diced Sweet Onion

1/4 Cup Sliced Brussel Sprouts

Salt and Pepper

4 Eggs

What To Do:

Heat the olive oil in a pan. Add the Brussel Sprouts, cut side down, and cook for about 7 minutes, or until they start to brown.  Add the onions and hash browns.  Cover and cook until brown and heated through.  Top with any style of eggs and enjoy.
