Zucchini and Asparagus Orzo

Orzo is a fun noodle. It gives me that pasta feeling when I eat without having to have tones of pasta.  This dish is great hot as a side dish at dinner or served cold as a pasta salad for lunch.  Another favorite orzo dish I serve often in with mushrooms and spinach.

What You Need:

1 Cup Orzo

2 Tablespoons Olive Oil

2 Small Chopped Zucchini

1 Bunch Chopped  Asparagus

1/2 Cup Parmesan Cheese

Salt and Pepper

What To Do:

Cook the orzo according to the package directions. Reserve about 1/4 cup of the pasta water. Stir the water and parmesan cheese into the pasta and set aside.  In the meantime, heat the olive oil in a pan.  Add the zucchini and asparagus and cook for about 10 minutes or until done to your liking.  Sprinkle with salt and pepper.  Stir into orzo and enjoy.
