This is great way to use up those leftover Easter eggs.  I personally love the red wine vinegar with the creaminess of avocado, it’s not for everyone so feel free to leave it out.

What You Need: ( Serves 1)

1/2 an Avocado

Hard Boiled Egg

2 Strips of Cooked Bacon




Red Wine Vinegar (Optional)

Salt and Pepper


What To Do:

Smash up the avocado and spread it on one piece of the bread. Sprinkle with salt and pepper. On the other slice of bread spread the mustard and mayo. Add the lettuce, bacon, and sliced egg.  Enjoy.
