Mexican Pasta Salad

 I love, love, love tacos!  This is such a fun spin on a taco.  I really like that it can be served cold or at room temperature.  That makes it perfect for a workday lunch.

What You Need:

2 Tablespoons Olive OIl

1/2 Chopped Sweet Onion

2 Diced Garlic Cloves

1 lb. Ground Beef or Turkey

1 Can Beans

1 Taco Seasoning Packet

3 Cups Cooked Pasta

1/3 Cup Sliced Black Olives

Chopped Red Onion

Shredded Cheese

Cilantro

What To Do:

Boil the water and cook the pasta according to the package directions.  In  skillet, heat olive oil and add the onions and garlic.  Stir in the ground meat and cook through.   Remove from heat and drain off the fat.  Drain and rinse the bean and add to the meat.  Add the taco seasoning according to the directions on the package. Add the meat, onion, cilantro, olives , and shredded cheese to the pasta and serve.
