This is a great salad for lunch or dinner. It is wonderful served hot or cold, which makes for great leftovers. If you are looking for a creamier sauce, reserve about half a cup of the cooking water. Add it back to the pasta and stir in the parmesan. This will create a wonderful cheesy sauce.
What You Need:
3 tablespoons olive oil
1 pound skinless, boneless chicken breast halves – cut into 1 inch pieces
1 tablespoon chopped onion
2 cloves garlic, chopped
2 cups frozen broccoli florets
salt and pepper to taste
1 pinch dried oregano
2 tablespoons grated Parmesan cheese
What To Do:
Prepare the pasta according to package directions. In a skillet, heat the olive oil. Add the chicken and onion and cook for about 7 minutes or until the chicken is cooked through. Add the garlic and broccoli, heat through. Add oregano, salt and pepper. Stir in the pasta, sprinkle with the parmesan, and enjoy.
