Eggs with Swiss Cheese and Sausage on Toast
I love breakfast! There are so many different things that can be put together to make a wonderful meal to start your day. I especially like that I can prep everything ahead of time to make the process go quickly. This meal takes a little bit more time than most of my breakfast ideas. By time I mean standing in front of the stove. I make some amazing quiches and casseroles that take an hour to cook but only minutes are spent in the kitchen. What is great about this meal, is that any type of eggs work wonderfully. I love anything with a runny yolk. My husband does not. This is the perfect breakfast for both of us.
Some of my favorite casseroles are the Taco Breakfast Casserole, Jalapeño and Ham Casserole, or the Chorizo Breakfast Casserole. These are so good because the can be prepped ahead of time and thrown into the oven in the morning.
For this meal I like to cook the sausage ahead of time. I usually start the eggs while the toast is in the toaster, that way I can make sure and keep an eye on the toast while it is under the broiler. I am always amazed at how fast the toast and cheese can from golden and bubbly to burned.
1/4 Cup Cooked Sausage
1 Piece of Toast
1 Slice of Swiss Cheese
Salt and Pepper
.What To Do:
Heat broiler. Place the cheese on the toast and but under the broiler for a few minutes so the cheese can melt. In the meantime, heat a few teaspoons of olive oil in a pan. Add the eggs and cook until desired doneness. Place the sausage on the toast and top with the eggs. Sprinkle with green onions, salt and pepper and enjoy.
