Mashed potatoes are such a comfort food. They are also a quick and easy addition to any meal.
When I make potatoes for large parties, such as Thanksgiving or Christmas, I like to peel the potatoes the day before and keep them in water. On the day of the party I simply drain the water and put them into a new pot of boiling water and cook them.
What You Need:
2 Lb. Potatoes
3 Crushed Garlic Cloves
3 Tablespoons Butter
1/4 Cup Milk
Salt and Pepper
What To Do:
Fill a large pot with water and bring to a boil. Peel and cube the potatoes. Add a tablespoon of salt to the water along with the potatoes and garlic. Boil until the potatoes are knife tender, about 15 minutes. Drain off most of the water and return the pan to stove. Turn the flame down to low and add the butter and milk. Sprinkle with a little more salt and mash. You may need to add more milk if the potatoes are dry. ( Butter works well for this also.)
Note;: The potatoes can be kept warm in a 170 degree oven. If they seem dry, add a little more milk or chicken stock.
