Mushroom and Monterey Jack Stuffed Potatoes

We seem to be on a baked potato kick at our house lately.  Because of this, I have gotten into the habit of throwing a few potatoes in the oven with my weekend breakfast casseroles so that they are ready for a quick mid-week side dish.

Baked Potatoes

1 Tablespoon Olive Oil

1 Basket Sliced Mushrooms

1/2 Diced Sweet Onion

2 Crushed Garlic Cloves

Salt and Pepper

2 Tablespoons Melted Butter

1/2 Cup Shredded Monterey Jack

What To Do:

Preheat oven to 400 degrees. In a separate pan heat the olive oil in a pan.  Add the onions and saute until slightly translucent.  Add the mushrooms and saute until most of the moisture had been released.  Meanwhile, Carve out the middles of the potatoes and place it in a bowl.  Stir in the melted butter, salt and pepper, along with the cheese.  Finally add the mushrooms and place back into the potato skins.   Bake in the oven for about 20 minutes, or until they are heated through.
