Orzo with Black Beans and Avocado Salad

The orzo and black beans in this salad really stand up to being made ahead.  I wouldn’t add the avocado until I was close to eating it so that they won’t turn brown.

What You Need:

1 Cup Cooked Orzo

1 Cup Chopped and Cooked Chicken

1 Can Black Beans

1 Avocado


Salsa Verde

Salt and Pepper

What To Do:

Cook orzo according to package directions.  Rinse and set aside.  Drain and rinse the beans.  Chop the avocado and cilantro.  Add everything to the cooled pasta.   Stir in a few tablespoons of salsa, or any dressing that sounds good to you. Sprinkle with salt and pepper. Enjoy!
