My husband and I have recently been on a baked potato kick.  Chili Cheese Baked Potatoes, Taco Meat and Black Bean, Loaded Twice Baked Potatoes and more.  I prefer potatoes that are baked in the oven better than those cooke in the microwave.  To make sure that this doesn’t add and hour to my dinner prep, I bake them ahead of time and store them in an airtight container. When I am ready I cut them in half, scoop out the middle and stuff them full of yumminess.
