Black Bean and Beef Breakfast Burrito

I love savory breakfasts.  This burrito is easy and quick to make. It can also be frozen.  When ever possible, I make the taco meat ahead of time.  Another trick I have is to cook the eggs in the microwave. Yes, that right, in the microwave.  Believe it or not they always come out light and fluffy. I have never tried to make more than one serving at a time, but when I am in a hurry during the week this is a great way to get breakfast done fast.

I already had all the taco meat ready from last mights dinner ( Taco Pie Casserole).  I scrambled the eggs in a microwave safe dish. I heated them for 2 minutes, stirred them, add the meat and beans and heated them for another minute.  Done!

What You Need:

1/2 Cup Chopped Onions

2 Crushed Garlic Cloves

Ground Beef or Turkey

Taco Seasoning

1 Can, Drained and Rinsed, Black Beans

IMG_60612 or 3 Eggs Per Person

Flour Tortillas

Salsa Verde

Cilantro

What To Do:

Heat the olive oil in a pan.  Add the onions and cook for about 5 minutes.  Add the garlic and cook for about 2 more minutes.  Add the ground beef and cook through.  Drain of the fat and add rinsed beans and taco seasoning.  Follow the directions on the package.  In a separate pan, heat a tablespoon of olive oil  add the eggs and cook until desired doneness.

On a tortilla, spread a handful of cheese. Add a couple of spoonfuls of eggs and beans on top. Sprinkle with cilantro, roll up, and enjoy.
