Loaded Twice Baked Potato

This potato could be a meal in itself. The fresh jalapeño and crisp bacon are compliment the cheddar cheese nicely.   These can be time consuming to make. To speed up the process I cook the bacon and potatoes ahead of time.



What You Need:

2 Baked Potatoes

1 Diced Jalapeño

4 Strips of Bacon

1 Cup Cheddar Cheese

Salt and Pepper











What To Do:

Preheat the oven to 375 degrees. Clean the potatoes and wrap them with tin foil.  Bake for about 45 minutes. Remove fro the oven and let them sit until they are cool enough to handle. Cut the potatoes in half and spoon out the insides.  Place the potato in a dish and mix in the jalapeño, bacon, and cheddar cheese.  Sprinkle the inside of the  potato skin with salt and pepper. Spoon in the potato mixture and bake, uncovered, for 20 minutes.
