Southwestern Egg Rolls

This is one of my go to pantry meals.  Everything I need to throw this together is either in the pantry or freezer.  They only think that I need to make sure we have are the tortillas, which is a staple in my house so I don’t usually have to worry about wether or not I have them.

I originally had these as an appetizer in a restaurant.  I took out the bell peppers, my husband doesn’t like them, and add bigger chunks of chicken to my version.

I like to fry my tortillas in a little oil to give them a wonderful crunch but they can be baked in the oven as well

What You Need:

1 Can Black Beans

1 Can Corn

2 Cooked Chicken BreastsIMG_5203

Cajun Seasoning

Shredded Cheddar Cheese

Tortillas

What To Do:

Drain and rinse the beans and corn.  Place them in a pan along with the chicken and cajun seasoning.  Heat through so that the seasoning has a chance to flavor all parts of the dish.  On a tortilla, place a handful of cheese, scoop a few spoonfuls of the chicken mixture onto the cheese.  Wrap like a burrito.  At this point, the tortillas can be fried in a pan or place in the oven to bake.
