Polenta is such a fun food to work with.  It picks up the flavors of whatever it is you are making.  I love to use it as the base for stuffing with pork.  I am lucky enough to have a store that has it pre-made so it makes this dish come together very quickly. I you have to make your own, you can make it ahead of time and even freeze it.

What You Need:

2 Cups Cubed Polenta

1 Tablespoon Olive Oil

1 Cup Chopped Onion

1/2 Cup Chopped Carrots

1/2 Cup Chopped Celery

What To Do:

Prepare the polenta according to package directions.  Heat the olive oil in a pan.  Add the veggies and saute until soft.  About 10 minutes. Salt and pepper to taste.  Carefully add the cubed polenta and heat through.

Note: The stuffing can either be served on the side or stuffed into the pork chop and baked.  Stuffing the pork chop adds a wonderful flavor to the stuffing but is not necessary.
