Rosemary Tomato Soup

I have always loved tomato soup.  Especially with a warm, gooey, grilled cheese sandwich.  This is such a simple soup to put together, then again, I think most soups are rather easy to throw together.

To save time I used a can of tomato sauce. Not spaghetti sauce, but tomato sauce.  It is the same canned tomatoes that I use for my Marinara Sauce.  The tomatoes are always sweet and flavorful, the peeling, chopping, and cooking has already been done. There is very little salt added so I have complete control over all the flavors that go into my dishes.

What You Need:

2 Tablespoons Olive Oil

2 Crushed Garlic Cloves

2 Sprigs Fresh Rosemary

2 Cans Tomato Sauce

4 Cups Chicken Stock

Salt and Pepper to Taste

What To Do:

In a large pot heat the olive oil. Add the garlic and rosemary and simmer until fragrant.  Add the tomato sauce and chicken stock and bring to a simmer.  Simmer for about 30 minutes.  Add salt and pepper to taste.  Once cooled, the soup can be frozen and stored in zip lock bags.
