Italian Salad for a Crowd

I love onions. Not everyone does. They can be very over powering.  To make sure that they don’t ruin the salad for my guests, I like to cut them up and marinade them in the salad dressing the night before.  This helps take a little bit out of the onions for those that don’t love onions, but still lets the flavor through for those that do.

I also like to drain and rinse the Garbanzo Beans and marinade them in salad dressing the night before.  It gives them a little kick that everyone likes.



What You Need:

1 Can Garbanzo Beans

1 Small Sliced Red Onion

1 Jar Marinated Mushrooms

1 Sliced Cucumber

1 Diced Orange Bell Peppers



What To Do:

Drain and rinse the Garbanzo beans. Place in a sip lock back and add a few Tablespoons of salad dressing.  This  can be done up to 2 days before.  Slice the onion, place in a separate plastic bag, add more dressing and let marinade over night of longer.   Place all the ingredients in a large bowl.  Dump in the onions and Garbanzo bean with the salad dressing.  Toss salad and add more dressing if desired.
