Baked Potatoes are one of my favorite things to eat. I rarely do. Don’t know why. They are so easy to throw together and always a yummy treat. I prefer to bake the potatoes in the oven, I don’t know why but I think they taste better.


I usually have what is on hand. For this dish I had some leftover hamburger meat. I added black beans to make it sure there was enough filling to go around.

What You Need:

Baked Potato

1 Lb. Hamburger Meat

1 Package Taco Seasoning

1 Can Black Beans

Grated Cheese

Chopped Green Onions


What To Do:

Preheat oven to 400 degrees. Wash and dry each potato. Wrap them in tin foil and bake for about 35 minutes or until they are cooked through. In a pan cook the hamburger meat and drain. Strain and rinse the black beans and add them to the meat. Add the taco seasoning, following the instructions on the package. Remove the potatoes from the tin foil and fill with meat and cheese. Top with the chopped green onions and enjoy.

Note:  This can be made ahead and frozen.  Place them on a cookie sheet and freeze for a few hours.  Wrap in tin foil and then seal in a plastic bag.
