Loaded Baked Potato Casserole

I just love baked potatoes,  I’m not sure why I don’t make them more often.  When I came across this recipe I was so excited I made it that night.

One of the great things about this recipe is many meals I can make with such a small amount of each ingredient.  Not realizing this at the time I prepped way more than I needed for one meal. No worries thought. I just pulled out my freezer tins and assembled 2 more.

What You Need:

6 – 8 Red Potatoes

2 Chicken Breasts

8 Slices Cooked Bacon

1 Cup Shredded Cheese

1/2 Cup Cream

Green Onions

Salt and Pepper

What To Do:

Preheat oven to 375 degrees.  Chop the potatoes and chicken into bite sized pieces. Toss together and sprinkle with salt and pepper.  Add the bacon and cheese and mix together.  Place in an oven proof pan and pour the cream evenly over the top.  (At this point the casserole can be frozen. ) Cover with tin foil and bake for about 30 minutes.  Remove the tin foil and and bake for another 15 minutes.  Top with green onions and enjoy.

Note:  If you want to make this in a smaller portion, just remembered to use equal amounts of potatoes and chicken.
