This is such an easy snack to throw together.  I think it would be perfect as an appetizer of a side dish.  Dip them in ranch I am sure any child, big or small, would be delighted to have them.

I decided to finely chop the zucchini because I hate cleaning the cheese grater. I think they would have stuck together better if I had shredded them. All in all, they were a huge hit.


What You Need:

1 1/2 Cup ZucchiniIMG_6345

1 Egg

1/2 Cup ShreddedCheddar Cheese

1/4 Cup Panko Crumbs

1/4 teaspoon Oregano

1/4  Garlic Salt

1/8 teaspoon Pepper

What To Do:

Preheat oven to 425 degrees.  Shred the zucchini and place in paper towels.  Squeeze as much of the water out the zucchini as possible.  Mix all the ingredients together in a bowl.  Place a spoon sized ball of the mixture on lined cookie sheet and bake for 20 minutes.  Enjoy.IMG_6351
