Hamburger Soup

There is nothing better than a homemade bowl of soup.  To be honest, soup is one of my favorite things to make.  I love the way simmering soup makes the whole house smell.  A lot of times I will make two or three different types of soup at the same time and freeze them in individual freezer bags. When I made this soup I also made a lovely bean soup.  It used most of the same veggies so it wasn’t that much trouble to do.

What You Need:

1 Lb Ground Beef or Turkey

1/2 Cup Chopped Onion

1 Crushed Garlic Clove

8 Cups Beef  Stock ( Veggie and Chicken Stock are also great with this)

1 Cup Chopped Potatoes

1 Cup Chopped Carrots

1 Cup Chopped Celery

1/2 Cup Chopped Bell Peppers

Salt and Pepper to Taste

Fresh Parsley

What To Do:   Cook the hamburger meat over medium heat.  Drain of the fat and add salt and pepper to taste. Stir in the onion and garlic and cook for about five minutes or until the onions are soft.  Be careful not to let the garlic burn.  Place all the vegetables and meat into a large pot.  Add the stock and simmer until all the veggies are fork tender.

Note:  You might need a little more or less stock.
