Chicken Wing Meatballs
My husband and I love chicken wings. I don’t always love the messy fingers. And I especially don’t like the messy fingers when we have guest over for a game and they are sitting on my furniture! Not that anyone is messy, but one good play and all bets are off. In the past I have made Buffalo Wing Mac and Cheese and then last week I came across this recipe.
I had a problem with the idea of mixing the blue cheese into the ground chicken. All I could see was it melting all over and leaving none of its goodness in the meatball but I tried it. Guess what. All the cheese melted out. Shocker! I really hate recipes where you are set up to fail! Here is my version, the cheese can melt out if you don’t get the meat all the way around but it is still way better than my first attempt.

I put all the ingredients in a bowl. I didn’t have any celery so I added Celery Salt. I didn’t get that celery crunch but I did get the flavor. I added the ground turkey, not chicken( who has time to grid their own chicken ? ) and mixed it with my hands.
I then grabbed a small amount of the meat mixture and placed a cube of blue cheese in the middle. I squeezed the meat all around and hoped it wouldn’t leak out. ( For the most part it didn’t.)
What You Need:
1 Celery Stalk Finely Chopped
1 Carrot Finely Chopped
3 Green Onions Finely Chopped
1/2 Cup Wing Sauce
1/4 Cup Panco Crumbs
1/2 teaspoon Garlic Powder
1/4 teaspoon salt
1/4 teaspoon Pepper
1/2 Cup Cubed Blue Cheese
What To Do:
Preheat oven to 350 degrees. Mix all the ingredients together, except the blue cheese. Take about 2 tablespoons of the mixture. Place a cube of blue cheese in the middle and wrap the meat around it . Place on a cookie sheet. Repeat. Bake for 20 minutes. Serve with a side of wing sauce.
Note: The meatballs can be frozen after they have been cooked.
