Spaghetti Squash with Marinara and Sausage

Spaghetti Squash is such a cool veggie.  Super easy to cook and best of all it gives you the feeling that you are eating carbs when you are not. ( Not that I watch my carbs… But I have heard some people do!) Once it is cooked it really can be treated as any veggie or pasta.  The sky is the limit. IMG_5692

After you clean out the seeds and stuff, much like you would any pumpkin at Halloween, rub the insides with olive oil. Sprinkle with salt and pepper and place  cut side down on a cookie sheet lined with tin foil.


The squash should really bake for about on hour.  I have heard that you can cook it in the microwave.  I personally prefer the taste that the slow baking in the oven gives the squash. But then again, I have never tried it in microwave.


Once the squash is cool enough to handle. Use a fork to pull the flesh from the skin.  It will sting up just like spaghetti ( very cool).     At this point you can do anything to it.  Treat it like pasta or a vegetable side dish.  I added sauce and meatballs.  It was perfect.


What You Need:

1 Spaghetti Squash

Olive Oil

Salt and Pepper

What To Do:

Cut the squash in half.  Remove all of the seeds and pulp.  Rub the squash with olive oil.  Generously salt and pepper the squash.  Place it face down on a cookie sheet and bake for about 1 hour.  Once it is cool enough to handle, use a spoon or fork to pull the flesh from the skin. Enjoy.
