Ham and Broccoli Quiche

This is so yummy and easy.  The pictures do not do it justice.  This is another of my recipes that I prep ahead.  Sometime I wonder how I would make it through the20131113-111244.jpg day without  prep aheads.  Now don’t get me wrong, I am not all the organized, but for some reason I can usually put together two or three meals at a time.  For this quiche I chopped up cooked ham and frozen broccoli. For the crust I have used hash browns or a pie crust.  Both are wonderful and easy. If using hash browns, line them  in the bottom of the pan with some olive oil and salt and pepper.  Then bake until golden brown. The pie crust does not need to be pre-baked.    I then add grated cheese, the ham and broccoli.

I then scramble 6 eggs and between 1/2 to a cup of cream together.  I and a little hot dried mustard and salt and pepper.  I pour it into the pan and then cook the quiche for about an hour at 400 degrees.

This meal is great as a breakfast or dinner.  For dinner I like to serve it with a simple salad.  It has also been a big brunch hit.  It is still nice and tasty when served at room temperature.
