Zucchini, Artichoke, and Pasta Salad
I like to chop up different vegetables ahead of time so that things, like this salad, can be thrown together for a quick weekday lunch. I usually do my chopping once or twice a week while I am preparing dinner. I also try to cook the pasta during this prep. This helps keep the time in the kitchen to a minimum.
What You Need:
1/4 Cup Chopped Zucchini
1/4 Cup Chopped Marinated Artichokes
1/4 Cup Chopped Yellow Bell Peppers
1/8 Cup Chopped Red Onion
1/8 Cup Chopped Black Olives
1/2 Cup Cooked Pasta
You favorite salad dressing
Salt and Pepper to Taste
What To Do:
Cook pasta according to package directions. Mix a few tablespoons of your favorite salad dressing into the cooked pasta while it is still warm. Once the pasta has cooled, mix the rest of the vegetables together and add a few more tablespoons of dressing. Salt and pepper to taste.
Note: If making ahead of time. Only add the dressing to the warm pasta. Wait to add the dressing to the rest of the vegetables until ready to serve.
